Indian food is rich and bursting with the
flavour of spices like cinnamon, cardamom, cloves and saffron.
Rice forms the staple diet but lamb, chicken and fish are all
popular. Often the meat or fish is combined with vegetables and
all dishes have a liberal but well balanced addition of herbs
and spices.
The head chef
at the Indian Nights Caterers has over 25 year’s experience
of Indian cuisine and has worked in a number of 5 star hotels.
His expertise is evident in dishes like his Achari Lamb which
is a medium dish cooked with home made pickle and just the
right amount of spice.
The Maharani Jhinga is also excellent
with tasty king prawns cooked with spinach, fresh herbs, butter
and garlic.
